Looking for ideas to use the chicken pouches I talked about recently, I pulled a quick and easy recipe together using the teriyaki flavor. Is it gourmet? Not really. But it is tasty and fills one up quickly and has plenty of protein and veggies. It is both one pot and FBC friendly for cooking.
Easy Teriyaki Chicken Rice
Ingredients:
- 1 cup instant rice
- 2 Tbsp dried onion
- 2 Tbsp dried red bell pepper
- 1 pouch Teriyaki chicken breast
- 1 packet coconut aminos
- 1 packet broth concentrate
Directions:
Pack the rice in a sandwich bag. Place the dried vegetables in a snack bag. Tuck in the packets and pouches.
In Camp:
Add 1¼ cups water to a small pot with the dried vegetables. Add in the chicken breast, coconut aminos, and broth concentrate. Bring to a boil, stir in rice. Put on lid tightly, take off stove and let sit for 10 minutes.
At higher altitude or in cold weather insulate with a pot cozy.
FBC Method:
Pack rice and vegetables in a quart freezer bag. In camp add the packets to the bag. Bring 1¼ cups water to a boil. Place bag in an FBC cozy, slowly add water in. Stir well, seal tightly and let sit insulated for 10 to 15 minutes.
Serves 1.
