Spicy Cheese Polenta

The recipe for Spicy Cheese Polenta comes from Freezer Bag Cooking: Adventure Ready Recipes. It is a simple recipe that works on its own, or used as a base for a topping of choice. Serve it as prepared, or add in chicken to make it more filling.

Spicy Cheese Polenta

Ingredients:

  • 2 packets instant grits
  • 1 Tbsp diced dried onion
  • ¼ tsp granulated garlic
  • ¼ tsp red chili pepper flakes
  • 1 ounce cheddar or provolone cheese

Directions:

Pack dry ingredients into a freezer bag for FBC, or a sandwich bag for one pot. Tuck wrapped cheese with bag.

FBC Method:

Dice up the cheese, add it to the freezer bag. Place freezer bag in a FBC cozy, add 1 cup boiled water. Stir well, seal tightly and let rest for 10 minutes.

Stir and eat.

One Pot Method:

Dice up the cheese. Add cheese and 1 cup water to a pot. Bring to a boil. Add in dry ingredients, stir well. Turn off stove, cover tightly and let sit for 5 to 10 minutes. Stir well and eat.

In cool temperatures or at altitude use a pot cozy to insulate.

Serves 1 to 2*.

Notes:

Find 1 ounce sticks of cheddar cheese with the cheese sticks in the cheese section of most grocery stores. If on a longer trip carry shelf stable cheese.

If you don’t like spicy, just add a pinch of pepper flakes, or leave out.

*As a dish on its own it will serve 1 person. If chicken is added (a 3 to 5 ounce can, with pop top, or a 7 ounce pouch), it will serve 2 people.
