Instant Meals: Pulled Pork Rice

This new recipe is both FBC (Freezer Bag Cooking) and One Pot method friendly. It’s easy to pull together and to prepare in camp.

Go FBC, and no cleanup besides your spoon!

It’s a filling meal for an average appetite. If you don’t like corn, just swap in what you prefer. Bell peppers, onions and so on would work well instead.

Pulled Pork Rice

Pack in a quart freezer or sandwich bag:

FBC Method:

Place freezer bag in n FBC Cozy. Add in the oil and 1 cup boiled water. Stir well and seal tightly. Let sit for 15 minutes.

Stir and eat.

One Pot Method:

Add 1 cup water and the oil to a small pot (1.3 to 1.5 liters), bring to a boil. Add in the dry ingredients, stirring well. Cover tightly and turn off the stove.

In cooler temperatures or at altitude use a pot cozy to retain heat.

Stir and eat.

Serves 1.

Notes:

If you don’t have freeze-dried cheese on hand, you can take the single serving sticks of cheese (1 ounce) and dice one or two up, add in with the rice step. Find next to the mozzarella sticks in the cheese aisle at many stores. They carry well for a day or two while backpacking, longer if it is cold out. They do get limp in heat, so not perfect for really hot trips.
