December is settling in, and cold days call for warm soup. This one pot chicken noodle soup recipe is quick to make. It will hydrate you and keep you warm long after enjoying it.
The soup can be full sodium or reduced, depending on the broth concentrate you pick up. Be sure to add the oil, it will fuel you through the cold.
One Pot Chicken Noodle Soup
Ingredients:
- ¼ cup dried vegetable blend (used a stew version)
- ¼ cup mini spaghetti (or broken up spaghetti)
- 2 chicken broth concentrate sticks (2 tsp)
- 1 packet oil (1 Tbsp)
- 1 3 or 5-ounce can chicken breast, with pop top or a 3-ounce pouch
Directions:
Pack the vegetables and spaghetti in a sandwich bag. Tuck the broth concentrate sticks, oil packet and chicken with it. Mark “Add 2 cups water”.
To prepare:
Add 2 cups water, broth concentrate, oil and chicken (with any broth) to a pot. Add in the dry ingredients, and bring to a boil.
Lower flame and let simmer, covered, for time indicated on spaghetti package (ours was 8 minutes). Keep an eye on the flame so it doesn’t boil over.
Let cool a bit and enjoy.
Serves 1 to 2 people. If serving 2, pack bread or rolls to dip into it for more calories.
