Street corn? In a mylar bag? How could I pass that up…..I developed an addiction to street corn years ago.

As I opened the bag of Luxefly Basecamp’s Mexican Corn Esquite, I was hit straight in the face with a trip to Flavor Town. I have a major thing for street corn, as I mentioned, and this is a dish I had never seen done in commercially made freeze-dried meals. The dish is $13.00 and is made mostly with organic ingredients. Luxefly isn’t cheap, but they do use good ingredients, though.

It is a very simple ingredient list – and yes, no fillers. The only potentially problematic part is the included mayo packet, but pfffftttt… you’ll be OK. It’s a tablespoon or so of creamy goodness.
Ingredients: Organic sweet corn, organic onions, organic chipotle flake, cotija cheese, organic onion powder, organic smoked paprika, organic cilantro, organic garlic + mayo packet
As a side dish, it has protein, fiber, and carbs… and is VERY low in sodium.

I was (stupid enough) to be lured into trying one of the freeze-dried onion flakes that are enrobed in chipotle flakes, right out of the bag, dry. I mean, it is GOOD-tasting and so airy/crunchy, and then the heat hits you. Just prepare the dish, ok? Then you can enjoy it without your gumline twerking for 10 minutes.
Oh, whatever, it was totally worth it. Like those onions should be sold as a snack. I mean, the flavor is on point.
I let it sit for a few minutes longer than the package says, but that is how I typically roll with freeze-dried ingredients. 3 ounces is about 1/3 cup of water, depending on how you measure it in the wilds.
I stirred it up and then added the mayo, stirring well.

Both Kirk and I really enjoyed this dish. It is a side dish and would be great served alongside burritos or similar dishes. It gives you the feel of fresh veggies, something that is always missed when out on adventures. The mayo tempers the spice, so don’t worry, even if you are heat-shy, you will love this one!
I highly recommend this choice. It has a lovely flavor and texture.
