A few years back, I reviewed some of the line from Next Mile Meals. They are a keto-friendly backpacking meal company focusing on protein and no filler carbs. The meals are easy to prepare (boiled water and sit time are all one needs) and very satisfying due to the large amount of meat in them. Each meal is a single serving, but if served over rice or pasta, one can stretch the meal to serve two hikers if you eat carbs.
The meals would also work for those with diabetes, in general (one would want to read the packaging for each meal to see if it works for them).
This meal was listed as gluten-conscious (so essentially gluten-free), dairy-free, and soy-free.

It retails for $15.95 on their website.

This is a very high-sodium meal, so keep that in mind if you’re considering it. I usually try to keep my meals under 1500 mg of sodium, or far better, under 750 mg. That is my taste, however. For others, the sodium isn’t an issue. And it might be seen as a bonus.
The clean ingredient list is beneficial, though.

This is a freeze-dried meal, and the ingredients come in large pieces – you can see what you will be eating.
I prepped it with 7 ounces of boiling water, a good stir, and let it sit for 15 minutes due to how big the pork pieces were. In cold weather or at higher altitude, I recomend using a cozy to retain the heat. It was very windy, so I opted to use an FBC Cozy.

The aroma was good, and the taste was great.I liked it without rice, and that it wasn’t soupy either.
But it had an issue for me:
The issue was the okra seeds (the whiteish specks in the photo above) in the meal. I am not a fan of pepper, okra, and other vegetable seeds. They are a textural issue for me. Were I to eat it again, I’d pick all the okra out (it’s huge slices), knock out the seeds, and break up the okra.
