One meal type I have always enjoyed from PackitGourmet is their no-cook salads, which are easy to prep. Add cool water, stir well, and let sit for 5 to 15 minutes. You can eat them as is, or make wraps and sammies with the filling.
It’s a great way to get a protein hit, without heavy weight. They currently sell three flavors of chicken salad.
Back in 2018, I reviewed the Curry Mango Chicken Salad for the first time, and figured that 8 years later, I needed to try it out again.
It’s winter in West Virginia, and eventually you have to accept the snow if you want to get out. The cold temps definitely call for food that will fuel you.

Dry weight is 3.2 ounces. It is a single serving, but if served with a carb of choice, you might find you can stretch it to two people.
At $14.99, it isn’t the cheapest, but I feel you get your money’s worth with this meal.
It has the equivalent of 1/3 pound of fresh chicken in the freeze-dried chicken used. What I really like is that the chicken is diced. It isn’t huge chunks that take a very long time to hydrate unless you break them up. The dice soak up the water quickly.
I also appreciate that the chicken salad requires no packets anymore – no mayo that ends up going all over your hands.
I gave 10 minutes to hydrate because of the outside temperature, even though it calls for 5 minutes. Always check your meals: stir well and take a tiny nibble. Temperature and elevation always come into play in how long it takes.

46 grams of protein is an excellent amount for fueling yourself. If eaten without a carb (bread, tortilla) the sodium level is also quite good. It’s not keto due to the currants and mangos, but then I don’t see fruit as an evil either.

Enjoyable and hearty, with a lot of flavor. No boring white chicken salad here. Well worth tucking in your backpack for sure.
