Yes, you can carry fresh eggs, but if you are going dry camping, and/or off-grid, freeze-dried eggs are your friend. Unlike the old freeze-dried eggs, these are not precooked. Just rehydrate and cook like fresh—just no worries about broken eggs or keeping it and the cheese cold. If you have refrigeration, use fresh eggs and cheese, and skip the rehydration time. Dehydrated bell peppers can be used instead of freeze-dried; they do require a longer soak time. Be wary of cheap brands, as they often leave seeds in the can/bag. Picking out the seeds is tiresome to say the least. That’s why I prefer freeze-dried – I usually do it myself with the peppers we grow.
I came across lower-sodium shelf-stable bacon bits at our local Food Lion store. These pouches can usually be found with the salad dressing in grocery stores, under multiple brands. Once opened, use it up within two meals if you don’t finish it all. In backpacking, I plan to use it for both dinner and breakfast. The amount used in the eggs will basically use up the bag.

Denver Bacon Egg Scramble
In a zip-top bag:
- ½ cup freeze-dried bell pepper
- 2 Tbsp dried onion
In a zip-top bag:
- ½ cup freeze-dried eggs or egg mix
- 2 Tbsp butter powder
In a zip-top bag:
½ cup freeze-dried cheddar cheese
Also Take:
½ cup or about 2.5 ounces of shelf-stable bacon
1 Tbsp or 1 packet olive oil
Directions:
Add ½ cup cool water to the vegetable bag, seal, and let rehydrate for 10 or so minutes. Add more water if needed.
To the eggs, add ½ cup of cool water, seal the bag, and shake. Let it rehydrate for 10 or more minutes.
Add a bit of water to the cheese (2 to 3 tablespoons), seal the bag, and shake every minute or two. It softens the dried cheese, allowing it to melt.
Heat a (preferably non-stick) skillet or wide pot over a medium flame. Add the oil and the vegetables. Sauté until tender.
Sprinkle the bacon in the pan, heat through, then add the eggs, then the cheese. Stir until scrambled and done.
Serve with tortilla chips if desired.
