Meal Review: Good To Go Cucumber Chaat Salad

We came across the no cook salads from Good To Go and picked up the Cucumber Chaat Salad to try out. I am always leery of dried cucumbers because you don’t know if they’ll be sliced or diced. But I am willing to experiment.

It is heavy on the hemp hearts (seeds) for the 21 grams of protein. It’s also low in sodium but has 25 grams of sugar (all but 3 grams naturally occurring).

Both vegan and gluten-free, with 21 grams protein.

The single serving meal is $10.75 on Amazon and $10.75 on their website.

Ingredient list:

Hemp Seed Hearts, Dried Cucumber, Dried Tomato Flakes, Dried Shallots, Tamarind Powder, Coconut Sugar, Dried Cilantro, Dried Leeks, Sea Salt, Amchur Powder (Green Mango Powder), Ground Cumin, Black Pepper, Crystallized Lime (Citric Acid, Lime Oil, Lime Juice), Dried Thai Chilies, Dried Peppermint, Ground Coriander, Fennel Seed, Ground Ginger, Ajwain Seed

Dried ingredients. The cucumbers are thinly sliced.
I added the 2/3 cup cool water called for, stirred well, and let rest for 10 minutes. I gave it another stir and let it sit for 5 minutes more.

It’s an interesting dish. Very unique, and I don’t think there is anything out there commercially similar. The vegetables rehydrated properly, with the cucumbers retaining just a bit chewy texture, which you want. The flavor is good, but it’s very Hippy Hut, right out of a food co-op deli.

My thoughts are divided on this entree. I personally would serve it as a side to share with hiking partners. As a main dish, it’s over whelming after 5 or 6 spoonfuls.

Why? It’s the chewy texture of the cucumbers, combined with the small hemp hearts gets repetitive quickly. But as a side dish, it’d give one a burst of fresh veggies you crave during hikes.
