Moving across the USA is complicated enough on its own, but add in having to pack up my hiking gear—my trail cooking gear? Spring is here, and instead of being in state parks or on the beach cooking, I am packing boxes instead.
I have been using up items in our hiker pantry as quickly as I can, and I saw a packet in it, one of the Beef Creations I had reviewed a bit back. It was the Sloppy Joe one. So, I was thinking of a quick (and easy) recipe I could make with it. (PS: These packets can also be found in some grocery stores now.)

A couple of ingredients and I had a quick meal. Super gourmet? Well, duh, no, but it tasted great. And it wasn’t high in sodium, either. (It’s 350 mg per packet.)

Sloppy Joe Rice
Ingredients:
- 1 cup instant rice
- 1 tsp or packet low sodium beef boullion
Also Take:
- 1 packet Sloppy Joe Beef Creations
- 1 packet or 1 Tbsp olive oil
- Shredded cheddar cheese*
Directions:
Pack the rice and broth powder in a snack bag. Tuck the packets alongside. If using freeze-dried cheese, pack it in a small bag.
One Pot Method:
Bring 1 cup water, oil, and Beef Creations contents to a boil. Add the rice and stir. Cover and let rest for 15 minutes to rehydrate. Stir up and toss with as much cheese as you like (follow the directions in the notes for freeze-dried cheese). In cooler temperatures or at high altitudes, use a pot cozy.
FBC Method:
Pack the rice and broth powder in a quart freezer bag. Place the bag in an FBC Cozy, and add the oil and Beef Creations. Add 1 cup of boiled water and stir well. Seal tightly and rehydrate for 15 minutes. Stir in cheese as desired.
Serves 1.
Notes:
You can carry cheese, even pre-shredded, on cool-weather trips. The key is not to touch the cheese with your hands or fingers. That is how cheese gets funky quickly.
In warmer trips, freeze-dried cheese works great. Add it to the top after the rice. The heat will soften it as the meal rehydrates.
