New Recipe: Egg and Sausage Scramble

Looking for an easy breakfast? Or breakfast for dinner? A one-pot scramble is the way to go. It has five ingredients and is very filling and high in protein. If you need more calories or want to split the meal with a hiking partner, heat up a couple of street taco-size flour tortillas and a splash of hot sauce.

This meal has the necessary calories, fat, and protein. The nutritional stats are at the end of the recipe.

Egg and Sausage Scramble

Pack all the ingredients except for oil in a quart freezer bag or an MRE-size mylar bag, tucking the oil in with it.

One Pot Method:

Add ¾ cup cool water to the bag, sealing it. Let the bag rest for 30 minutes. Do not use warm or hot water, as you will cook the eggs.

Heat the oil in a wide/shallow pot or fry pan (preferably non-stick) over a very low flame. Shake the bag of hydrated ingredients, then add in to the pan. Using a spoon or spatula, gently stir the mixture as it scrambles. If you notice liquid in the pan, this is normal with freeze-dried sausage; cook it off while continuing to move the eggs around.
