Air Fryer Dehydrating: Fruit Leather

A friend of mine on our island, Wendy, has had an ample crop of huge raspberries, so she was looking for ways to preserve them. She decided to try fruit leather and use the dehydrating cycle on her Instant Pot Vortex Plus Air Fryer.

She had a couple of extra trays, so she could do a bigger run than normal. Wendy used about 3 cups of fresh raspberries and ¼ cup of her favorite monk fruit sweetener. She goes for sugar-free, but you can use what you like, be it sugar or honey.

Using an immersion blender, she mixed it up.

She left the seeds in. If you don’t like seeds, you would want to use 4 cups of berries and then strain through a fine metal mesh strainer.

She used parchment paper to spread on.

She rotated her trays halfway through, which took about 11 hours. Of course, that will vary depending on the humidity.

Checking to see if done. You want it not to have any wet spots, and preferably minimally tacky. If so, then continue drying, checking every hour.

For storing: Cut as desired, then wrap each section in fresh parchment paper. Store tightly sealed in a freezer bag or hard-sided container.
