When I picked up a bag of Backpacker’s Pantry Summit Breakfast Scramble meal I wasn’t looking into it too deeply and didn’t notice it had beans in it. Huh. Interesting take on the morning scramble. A no-meat breakfast, but still adding in more protein.

The Summit Breakfast Scramble is 2.1 ounces dry and serves 1. It retails for $10.99 . It is vegetarian friendly, but not vegan.

Precooked Dehydrated Red Beans, Freeze-dried Precooked Scrambled Eggs (Whole Eggs, Corn Starch, Salt, Citric Acid, Xanthan Gum), Freeze-dried Cheddar Cheese (Pasteurized Milk, Cheese Cultures, Salt, Enzymes, Annatto (Coloring), Powdered Cellulose (To Prevent Caking)), Potato Flakes (Potatoes, Mono- And Diglycerides, Sodium Acid Pyrophosphate, Citric Acid), Tomato Powder, Dried Red Bell Pepper, Dried Green Bell Pepper, Sea Salt, Dehydrated Garlic, Dehydrated Onion, Ground Black Pepper, Smoked Paprika Powder, Butter Sauce Flavor (Modified Corn Starch, Salt, Whey Solids, Non-fat Dry Milk, Maltodextrin, Butter, Sugar, Buttermilk Powder, Natural Butter Flavor, Xanthan Gum, Lactic Acid), Crushed Red Pepper, Cayenne Pepper, Thyme.

It has a pleasant aroma upon opening. No cumin thankfully. Often companies put my least favorite spice in their meals, but this one is free of it! What really pops is the smoked paprika aroma, which is to me a nice smell.

The back of the bag calls for 1 cup of boiled water to be added. I noticed on their website it still shows 1¼ cups of water. If anything, the meal only needs about 7/8 of a cup of water added. The directions call for 15 minute sit time. I gave it 20 and it still had a bit of extra water left in it. Dehydrated beans can take their sweet time to hydrate for sure. The scramble is on the very moist side when prepared with the called-for cup of water.
However when I looked on their website under “Preparation & Storage” I noticed it had different directions than on the photos on the website, and on the package that I had in hand:
PREPARATION & STORAGE
1. Remove and discard oxygen absorber.
2. Add 3/4 cups (180mL) of boiling water.
3. Stir well, seal pouch, wait 8 minutes.
4. Stir again, reseal, wait 7 more minutes. Enjoy!
So I wasn’t wrong to think it needed less water. I’d say maybe follow this instead of what is on the package (though I have to think it’ll have a sticker added eventually).
The taste is pretty good for a freeze-dried breakfast. It actually would be great poured over a mess of hot instant rice (and then would serve 2), where the saucy eggs would work well. It’s a bit messy though to use as a breakfast burrito filling.
You won’t miss the meat in this breakfast. It is very hardy and will fill you up.
