When we used to camp in tents or, if it was car camping, we’d always bring along a gourmet breakfast for one morning when we wanted to be lazy and spend time just being in camp. Pancakes, syrup, peanut butter or similar, eggs, and bacon—the whole works. I packed up everything we’d need since we were out in our RV doing dry boondocking (no water).

I had picked up a bottle of Happy Grub Whole Wheat pancake mix recently. It wasn’t bad, but I was not happy either. The pancakes were fine-tasting for whole wheat, but the squeeze hole clogged no matter how much I shook the bottle. So, instead, I took the lid off and poured it out. I also found the dry mixture was very solid, and I had to bang it quite a bit and then stick a butter knife inside to finish powdering it before I added the water.
Still, the ingredient list is far better than that of the similar Bisquick mix. But overall, I was disappointed that the bottle didn’t work as promised. I probably won’t pick it up again due to the clogging.

Everything was cooking in our RV kitchen.

Plated up. On my last day out, I used all the cookware and plateware. I could do the dishes later at home.
The Easy Pancake Feast
Ingredients:
- All-in-one pancake mix
- 1 package shelf stable bacon
- ½ cup freeze-dried eggs
- Pure Maple Syrup
- Peanut butter or Sunbutter cups, if desired
- Fresh fruit, berries, or bananas (if desired)
- 2 Tbsp oil or 2 oil packets
Directions:
Pack the eggs in a snack-size zip-top bag. Mark “Add ¾ cup water” on the bag.
To Prepare:
Add cool water to the eggs, seal the bag, and shake well. Set aside for 5 minutes.
Make pancake mix as directed. Set aside.
Add a bit of oil over a medium-low flame in a small non-stick frypan. Add the eggs and gently scramble till set.
Meanwhile, heat a large non-stick frypan over medium, adding in a bit of oil if desired. Squeeze pancakes as desired, and cook until done.
I fit the bacon in around the pancakes till sizzling.
Serve pancakes, bacon, and eggs with fruit, peanut butter, and syrup as desired.
Serves 2.
