I was looking at older recipes and was inspired to make this Cheesy Chicken Herby Rice recipe.
It’s a protein loaded (green peas are actually a good source!) and easy to make Freezer Bag Cooking recipe for a filling trail meal. The recipe uses freeze-dried ingredients to lower the weight/size of the meal. If you seal it in a food vac or mylar bag with a desiccant and or oxygen packet(s) this will hold for months.
We have posted about freeze-drying peas and mozzarella cheese at home as well.
You can substitute canned/pouched chicken and use shelf-stable parmesan cheese if desired. If you remove these items, remove that much water from the total amount (so if you skipped the chicken, take away ¼ cup water).
It’s also got the directions included for making it one pot method as well.
Cheesy Chicken Herby Rice
In a quart freezer bag:
- 1 cup instant rice
- ½ cup freeze-dried green peas
- ¼ freeze-dried mozzarella cheese
- ¼ freeze-dried diced chicken
- 1 Tbsp granulated onion
- 1 tsp dried parsley
- 1 tsp granulated garlic
- 1 tsp low sodium chicken boullion
Also Take:
- 1 Tbsp or 1 packet olive oil
FBC Method:
Place freezer bag into an FBC Cozy. Add oil and 1¾ boiled water, stirring well. Seal bag and let sit for 15 minutes.
Stir and serve.
One Pot Method:
Add oil and 1¾ cups water to a 1.3 Liter or similar pot, bring to a boil. Add in dry ingredients, stir well and cover tightly for 15 minutes.
In cooler temperatures or at high altitude use a pot cozy to insulate.
Stir and serve.
Serves 1 huge appetite or 2 smaller ones.
