Spam Fried Rice
In a quart freezer bag:
- 1 cup instant rice
- 1 Tbsp diced dried shallots or onions
- 2 Tbsp dried carrots
- 2 Tbsp freeze-dried green beans
- 2 Tbsp freeze-dried corn
- 1 tsp dried chives
- ½ tsp diced dried garlic
- ¼ tsp red pepper flakes
- ¼ tsp dried powdered ginger
Also take:
- 1 to 2 packets or 1 to 2 tsp soy sauce
- 1 single serving Spam packet
- 1 Tbsp or 1 packet oil
- 2 fresh eggs, in shell, or commercially dried eggs, packed in a small bag
Directions:
Bring 1½ cups water to a near boil. Add to the rice bag, stir well, seal tightly and put in a cozy for 15 to 20 minutes. If using dried eggs, follow the directions to rehydrate 2 eggs worth. Add the water, seal tightly and shake to dissolve.
Heat the oil in your pot and add in the Spam. Cube up and stir-fry till turning golden. Add in the cooked rice and stir constantly till smelling great. Splash on the soy sauce and mix in. Make a hole in the center and add in the egg mixture. If using fresh eggs, crack into the hole. Start scrambling them and then toss with the rice. Pull off the heat as soon as the eggs are setting up.
Serves 2.
Notes:
For best results, use a 2 Liter size non-stick pot that is wide and shallow, or even better, a trail wok. A bamboo spoon works well at tossing, forget the flimsy spatulas on this recipe!
