Italian Tuna Angel Hair
Pack in a sandwich bag:
- 8 ounces angel hair pasta, broken into thirds
Pack in a small bag:
- ½ cup sun-dried tomatoes, diced
- ¼ cup dried bell peppers, diced
Pack in a small bag:
- ¼ cup shelf-stable Parmesan cheese (think the Green Can)
- 1 tsp dried parsley
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp granulated garlic
- ¼ tsp ground black pepper
Also Take:
- 2.6 to 3 ounce pouch tuna, preferably packed in olive oil
- 2 Tbsp or 2 packets extra virgin olive oil
Directions:
Add 6 cups water, tomatoes and peppers to a 2 Liter pot, bring to boil (watch it, it will foam up). Add in angel hair and cook as directed, lowering the flame as needed to maintain a low boil.
Carefully drain the cooking water. Add in the tuna (with oil) plus the olive oil, toss to combine. Shake the cheese bag on top. toss to coat.
Serves 2 large portions (or 2 still big portions plus a hungry toddler)
Notes:
Can’t find the Starkist tuna pouches with olive oil in your store locally? Use what you can find (most grocery and big box stores carry the water packed tuna) or pick up a can of it by Starkist.
