Curried Fruit Hummus

Instant hummus mix is a versatile ingredient to have on hand for trail cooking. In this recipe it makes a quick spread or dip for lunch, and is vegan friendly.

Curried Fruit Hummus

  • 1⁄4 cup instant hummus
  • 3 Tbsp freeze-dried apples
  • 3 Tbsp freeze-dried mangoes
  • 1⁄2 tsp mild curry power
  • 1 Tbsp extra virgin olive oil or 1 packet

At home: Pack the hummus, fruit and curry powder in a sandwich bag and seal tightly. Pack with it the oil, and a serving of crackers of choice or tortillas.

Add ½ cup cold water and oil, stir and seal tightly. Knead the bag gently till mixed. Let sit for a few minutes to rehydrate. Serve with crackers or spread on tortillas.
