One Pot Meal: Beef Giniling

With summer ending, I’ve been thinking about new recipes. It’s been a while since I posted a Filipino-influenced backpacking meal.

Beef Giniling is a Filipino comfort food stew served over white rice. I think if more tried it, they probably wouldn’t have a clue it was Filipino, just a tasty dish.

In fall and winter, it’s almost perfect for dinner. It warms you up and gives you a big hit of protein from the ground beef and green peas. You can also make it with freeze-dried sausage if you prefer pork.

Traditionally, you cook and simmer the vegetables, using diced potatoes. Instant hash browns are an easy swap – and are precooked (as are all the ingredients besides the onion) in this recipe. I opted for the one-pan method instead of FBC, so the sauce would be properly thickened up.

Pack the instant rice into a separate bag. If using the FBC method, use a freezer bag. Mark the bag “Add 1 cup water”.

Place the remaining dry ingredients in a sandwich bag. Mark “Add 1½ cups water”.

To make the rice:

Bring 1 cup water to a boil. Either add the rice to a bowl, add the water, and cover tightly, or place the freezer bag in an FBC Cozy, add the water, and seal tightly. Let sit for 15 minutes.

To make the stew:

Add 1½ cups water to your pot, add the dry ingredients, the soy sauce, and oil. Let sit for 5 minutes.

Bring to a boil, stirring well. Cover tightly and let sit for 10 minutes.

Serve the stew over the rice – or if eating out of the pot, stir the stew and put the rice in the middle.

Serves 1 very large appetite, or 2 average ones.

Notes:

If you like salt, add a pinch to your rice. Season the stew to taste with ground black pepper and additional soy sauce, as preferred.

If you want to avoid carrying liquids, you can find dry powder soy sauce on Amazon. Or you can take packets with you; I would take at least 3 packets.
