Tuna Bruschetta Sammies
Ingredients:
- ¼ cup sun-dried tomatoes, diced
- 2 Tbsp diced dried onion
- 1 tsp dried parsley
- ½ tsp dried oregano
- ¼ tsp granulated garlic
- ¼ tsp ground black pepper
- 1 2.6 ounces pouch of oil-packed tuna
- Cheese, thinly sliced
- 4 slices bread (or other carb, such as 2 large flour tortillas)
- Mayo packets, if desired
Directions:
Pack the tomatoes through pepper at home in a snack-size zip-top bag. Mark “Add 6 Tbsp water”.
To make:
Add 6 Tablespoons of cool water to the bag and let it rehydrate for 30 minutes. Roll the tuna bag gently to break it up, open it, and add it to the vegetables, stirring to mix.
To serve two, spread the bread/tortilla with mayonnaise (if desired) and top with a slice or two of cheese and the tuna.

Notes:
If you cannot find the pouched tuna, there is canned tuna in oil with pop-top lids. Read the cans carefully; some are packed in cheap oil and broth, and others are in EVOO. The cans are 5 to 6 ounces.
Ask nicely at grocery store delis or fast food places for mayo packets.
