I lived off of a similar dish for much of my college years, and it makes a very budget friendly backpacking recipe. Rice and Beans is a simple dish and is vegan friendly as well. It fills you up, it’s affordable and also makes a great burrito filling, allowing a 1 person recipe to easily serve 2 hikers.
Rice and Beans
Ingredients:
- ½ cup instant rice
- 1/3 cup instant refried beans (pinto or black)
- 1 Tbsp dried onion or shallots
- 2 packets salsa
- 1 cup water
Directions:
At home, add the rice, beans and onions to a quart freezer bag or sandwich bag. Tuck in the salsa packets. Mark “Add 1 cup water” on bag.
FBC Method:
Bring 1 cup water to a boil. Place freezer bag in a cozy, add in water, stirring well. Seal bag tightly, let sit for 15 minutes. Stir well, top with salsa.
One Pot Method:
Bring 1 cup water to boil, add in dry ingredients. Turn off the stove, cover tightly, and let rest for 10 minutes. If at altitude, or colder temperatures, insulate pot. Stir well and top with salsa.
Serves 1.
Notes:
Bring tortillas to make burritos. If you like cheese, feel free to add.
For higher fat and more calories, add 1 packet olive oil with water.
