Sunballs
Ingredients:
- ½ cup quick cooking oats
- ½ cup oat flour
- ½ tsp ground cinnamon
- ¼ cup Dried Cherries
- ¼ cup Sunbutter creamy
- ¼ cup honey
- 1 Tbsp organic powdered sugar
Directions:
Mix the oats through the honey together in a medium mixing bowl. Make balls with a 1 Tablespoon Disher, packing tightly with your hands and rolling into balls.
Add powdered sugar to a shallow bowl. Roll balls in sugar. Store in an airtight container in the refrigerator.
To carry on the trail, carry balls in a freezer bag, rolled up and protected from crushing.
Makes about 14 balls.
Notes:
You can make your oat flour quickly enough. Grind oats in a mini food chopper or blender.
Read powdered sugar labels. Some contain tapioca starch; others contain cornstarch. I have good luck with Wholesome Sweeteners Organic.
