PB Fudge

Ingredients:
  • ½ cup natural peanut butter
  • 6 Tbsp honey
  • ¼ cup milk chocolate chips
Instructions:

Combine the ingredients in a small saucepan and heat over medium-low. As soon as the chocolate melts and is incorporated, remove the pan from the heat and pack in a sandwich box-size container (or small glass pan).

Stash in the refrigerator till cold, then pack for your trip. You can take the sandwich box and cut off portions or cut and stash in a small bag.

Notes:
On the peanut butter: Use chunky or smooth, your choice. Feel free to substitute other nut butter. Use natural butter; most commercial PBs contain excess sugar and not-so-good fats. It will also affect the fudge if you do.
Substitute dark or semi-sweet chocolate as desired.
