Hiker’s Pantry Fudge
Ingredients:
- 1½ cups powdered sugar
- ¼ cup dry milk
- ¼ cup unsweetened cocoa powder
- 1 pinch salt
- ½ tsp pure vanilla extract
- 2 Tbsp unsalted butter
- 2 Tbsp water
At home:
Add the powdered sugar, dry milk, cocoa powder, and salt to a medium mixing bowl and whisk together well.
Add the butter and water to a small glass bowl and melt on high for 30 seconds. If the butter is not fully melted, add 10-second bursts until it is.
Slowly add the melted butter mixture and vanilla with a metal spoon, mixing well till combined.
Take a sandwich box and lightly spray with non-stick cooking spray or butter it. Scoop the mixture into the box and pat out flat using the spoon or clean fingers.
Cover tightly and let chill for 30 minutes or longer to set up. Carry in the box or pop out and wrap in plastic wrap or wax paper.
Notes:
You can also add in nuts and dried fruit if you like, stir in at the end. Start with ¼ cup total and add more as desired.
Add 1 to 3 teaspoons of instant coffee or espresso granules for a mocha flavor.
To make plant-based/vegan, use powdered coconut milk and margarine instead.
