Instant hummus mix is a versatile ingredient for trail cooking. This recipe makes a quick spread or dip for lunch and is vegan-friendly.
Salsa Hummus
Ingredients:
- 1⁄4 cup instant hummus
- 1 tsp tomato powder
- 1 packet salsa
- 1 Tbsp olive oil or 1 packet
Directions:
At home, pack the hummus and tomato powder in a snack-size plastic bag. Seal tightly and pack with the salsa and oil packets. Take with you a serving of crackers or other nibbles of your choice.
Add 1/3 cup cool water, salsa, and oil. Stir well or knead the bag gently until combined. Let sit for a couple of minutes to blend the flavors.
Serve with the crackers or spread on a tortilla.

Notes:
Substitute dehydrated salsa for the packet. Use 2 tbsp dried, and add it to the instant hummus powder. Add an additional 2 tbsp water and allow it to rehydrate for 10 to 15 minutes before eating.
To find salsa packets, ask at fast food or delis for a packet or two.
