Herbed Tomato Couscous Salad

No-cook lunch-friendly meal, it is also vegetarian-friendly. Leave the cheese out for it to be vegan. Add water, stir well, then let rehydrate for a few minutes.

Herbed Tomato Couscous Salad

Ingredients:
  • ½ cup couscous (whole wheat or regular)
  • 1 Tbsp tomato powder
  • ½ tsp Italian herb seasoning
  • ¼ tsp ground black pepper
  • ¼ tsp fine sea salt
  • ¼ tsp granulated sugar
  • ¼ tsp granulated onion
  • 1 Tbsp olive oil or 1 packet
  • 2 Tbsp or 2 packets of shelf-stable parmesan cheese
Instructions:

At home, mix the couscous with the seasonings and pack it into a pint or quart freezer bag or sturdy sandwich bag. Pack the Parmesan cheese in a small bag, and tuck the oil packet in with the bags.

To prepare:

Add the oil and ½ cup cool water to the bag, stir well, and let sit for 10 minutes to rehydrate. Stir well again, add the cheese, and mix in.

Serves 1.
Notes:
This cold salad can be made with hot water as well for a hot meal.
