Instant hummus mix is a versatile ingredient for trail cooking. This recipe makes a quick spread or dip for lunch and is vegan-friendly.
Curried Fruit Hummus
Ingredients:
- ¼ cup instant hummus
- 3 Tbsp dried apples
- 3 Tbsp freeze-dried mangoes
- ½ tsp mild curry powder
- 1 Tbsp extra virgin olive oil or 1 packet
Instructions:
At home:
Pack the hummus, fruit, and curry powder in a sandwich bag and seal tightly. Add the oil and a serving of crackers or tortillas.
In Camp:
Add ½ cup cold water and oil, stir, and seal tightly. Knead the bag gently till mixed. Let sit for a few minutes to rehydrate. Serve with crackers or spread on tortillas.
