Avy-Cran Wraps
Ingredients:
- 1 small ripe avocado
- 1-ounce cream cheese*
- 1-2 Tbsp dried cranberries
- 2 large flour tortillas, soft taco size size
At home:
Put the cranberries in a small bag. Pack with everything else. To keep avocadoes intact, wrap them in a paper towel and carry them in your drink cup/mug to protect them.
In camp:
Spread the cream cheese on the tortillas and sprinkle the cranberries on top.
Take a paper towel and fold it into quarters (using the towel you packed your avocado with). Put that in your left palm and place the avocado on it. Carefully cut the avocado in half using a clean knife. Remove the pit carefully, using a spoon, not a knife! Using your spoon, pop the flesh loose from the skin. Cut the flesh into slices carefully and place them on the wraps.
Roll up and eat.
Notes:
Avocados are sturdier than you think—pad them with a paper towel or two and carry them in your mug. This is an excellent wrap for your first or second day out.
Cream cheese carries well; avoid very hot temperatures. You can freeze it before hiking, and it will thaw as you hike. Look for 1-ounce packets or tubs in grocery stores, often sold if the store carries fresh bagels. If all you can find is a regular tub, freeze it and plan a second meal to use it up in. Cream cheese is great melted into pasta and boosts your calories, fat, and protein!
