Red tomatoes and green spinach make for a colorful bowl of mashed potatoes, with chicken for protein.

Dried spinach can smell strong when you add water, but it mellows out by the time you go to eat. So don’t overlook it as a vegetable to add to trail meals.

Ingredients:

At home:

Pack the dry ingredients in a quart freezer or sandwich bag. Mark the bag “Add 1¼ cups water.” Pack the chicken and cheese with it. If using freeze-dried cheese, add it to the dry ingredients.

Freezer bag method:

Add 1¼ near boiling water and the chicken with broth from the can to the dry ingredients. Stir well, seal tightly, and put in an FBC cozy for 10 minutes. Stir in the diced-up Swiss cheese if using fresh.

Insulated mug method:

Add 1¼ cups boiling water and the chicken with broth from the can to the dry ingredients. Stir well, cover tightly, and let sit for 10 minutes. Stir in the diced Swiss cheese if using fresh.

Serves 1.
Note:
In hot weather, use shelf-stable cheese rather than regular cheese. In our updated version, we used freeze-dried Swiss cheese, which we dried ourselves, using 2 heaping Tablespoons worth. It has a great nutty flavor and makes a great low-carb snack. We can find bags of grated Swiss cheese at the restaurant supply stores to make it easy. I found I liked it better than using fresh cheese in this recipe. Swiss cheese carries well, however. It will get soft, but it is fine to eat for two days on the trail. It’s also lower in sodium than most cheeses in general.
