Curry Chicken Pitas
Ingredients:
- 1 7-ounce chicken breast pouch
- 4 packets mayo
- 2 Tbsp diced dried onion
- 1⁄4 cup chopped dried apples
- 1 tsp mild curry powder
- 1⁄4 tsp dried ground ginger
- 2 pita pockets or flour tortillas
At home:
In a snack size plastic bag pack the dried onions and apples. In a small bag pack the spices. Pack with the other items.
Cover the dried onions/apples with cool water and let soak for 15 to 20 minutes. Drain off any remaining water. Open the chicken packet, add in 2 packets of mayo and the spices, stirring in well. Stir in the onion/apples and add more mayo packets as desired. Let sit for a couple minutes to blend, then serve on wrap of choice.
Serves 2.
Notes:
If you ask nicely, often grocery store delis will slip you a few mayo packets.
