A hearty one-pot recipe, easy to make while in camp – be it a tent, trailer, or RV…or even at a cabin. All you need to do is boil water and wait. This recipe makes a big pot of food. Depending on appetite, it will serve 2 to 4 people. It works well if you have a child or two along, who don’t eat a lot.

Boondocking Beef and Corn Rice Bowl
Ingredients:
- 2 cups instant rice
- ½ cup freeze-dried ground beef
- ½ cup freeze-dried corn
- 1 stick of Cook Stix Chicken or 1 Tbsp any chicken broth powder/bouillon
- 2 Tbsp butter powder
- Shelf-stable parmesan cheese (green can)
Directions:
At home, pack rice through butter powder in a gallon zip-top bag. Mark “Add 3 cups of water” on it.
In a 2 Liter pot, bring 3 cups of water to a boil.
Stir in the dry ingredients, cover, and take off the stove.
In cooler temperatures or at high altitudes, insulate the pot.
Let sit for 15 minutes.
Stir well and top with shelf-stable Parmesan cheese as desired.
Serves 2 to 4.
Notes:
If you do not like corn, use any other freeze-dried vegetable you prefer.
If you are camping with refrigeration, you can add butter instead of the butter powder. You don’t need to change the water; 2 to 3 tablespoons of fresh unsalted butter works well.
We tried the Chicken Stix in this recipe; any broth powder will work. An entire stick of it contains 12 grams of protein, which boosts the meal.
